.Bake the Cake
1.Preheat oven to 350°F (175°C).
2.Grease and flour three 8-inch cake pans and line bottoms with parchment paper.
3.Whisk flour, baking powder, and salt together.
4.Beat butter and sugar until light and fluffy.
5.Add eggs one at a time, mixing well.
6.Mix in vanilla, oil, and sour cream.
7.Alternate adding flour mixture and milk until batter is smooth.
8.Divide batter evenly between pans.
9.Bake 22–30 minutes until a toothpick inserted comes out clean.
10.Cool completely before assembling.
. Prepare the Strawberries
1.Dice strawberries and place them in a bowl.
2.Add sugar and balsamic glaze.
3.Stir gently and refrigerate while preparing the frosting.
. Make the Whipped Cream Frosting
1.Chill mixing bowl and beaters for 5 minutes.
2.Beat heavy cream until it begins to thicken.
3.Add ¼ cup powdered sugar and vanilla extract.
4.Beat until soft peaks form.
5.In another bowl, mix cream cheese with remaining powdered sugar until smooth.
6.Fold whipped cream into cream cheese mixture.
7.Add diced strawberries and mix gently.
. Assemble the Cake
1.Place the first cake layer on a serving plate.
2.Spread whipped cream frosting evenly.
3.Add a layer of strawberries.
4.Repeat with remaining cake layers.
5.Garnish with whole strawberries if desired.
