Ingredients
  

  • For the Salad:
  • 1 cucumber peeled and diced
  • cups cherry tomatoes quartered
  • 8 oz fresh mozzarella cut into pieces
  • ½ red onion finely chopped (optional)
  • Fresh basil leaves optional
  • For the Dressing:
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp dried basil or 3 tbsp fresh basil
  • 1 tbsp dried oregano
  • Salt and pepper to taste

Instructions
 

  • Prepare the dressing ; Mix olive oil, balsamic vinegar, herbs, salt, and pepper in a small bowl.
  • Chop ingredients ; Dice cucumber, slice tomatoes, and cut mozzarella into bite-sized pieces.
  • Combine ingredients ; Add cucumber, tomatoes, mozzarella, and onion to a bowl.
  • Mix and coat ; Pour dressing over the salad and gently toss.
  • Let it rest ; Allow to sit for 10 minutes before serving for best flavor.

Notes

  • Add dressing just before serving to avoid a watery salad
  • Use fresh, firm cucumbers for best texture
  • Adjust vinegar and oil to taste
