Ingredients
  

  • 2 large ripe bananas mashed (about ¾ cup)
  • ½ cup almond butter
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups rolled oats
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon optional
  • ¼ cup chocolate chips
  • cup chopped walnuts

Instructions
 

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the mashed bananas, almond butter, maple syrup, and vanilla extract.
  • In a separate bowl, mix the rolled oats, salt, cinnamon, chocolate chips, and walnuts.
  • Add the dry ingredients to the wet ingredients and stir until fully combined.
  • Scoop portions of dough onto the prepared baking sheet.
  • Gently flatten each cookie with the back of a spoon or your hands.
  • Bake for 12 to 15 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for several minutes before transferring to a wire rack.

Notes

  • Use very ripe bananas for maximum sweetness.
  • Rolled oats provide the best chewy texture.
  • For a no-added-sugar version, omit the maple syrup and use extra-ripe bananas.
  • Store in an airtight container for up to 6 days in the refrigerator.
  • Freeze baked cookies for up to 3 months.
