Ingredients
  

  • 2 lbs potatoes peeled and cubed
  • 2 cups chicken broth
  • 8 oz bacon cooked and chopped
  • 1/2 onion finely chopped
  • 2 garlic cloves minced
  • 1 tsp salt or to taste
  • 1/4 tsp black pepper
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup cheddar cheese shredded
  • 3/4 cup sour cream
  • Green onions for garnish

Instructions
 

  • Add potatoes, chicken broth, bacon, onion, garlic, salt, and pepper to the crockpot.
  • Cook on low for 5–6 hours or high for 3–4 hours until potatoes are tender.
  • Lightly mash potatoes to your desired consistency.
  • Add butter, flour, milk, cheese, and sour cream.
  • Stir well and cook on low for 30–60 minutes until thick and creamy.
  • Serve hot with toppings like cheese, bacon, and green onions.
