- ¼ cup all-purpose flour
- 2 large eggs beaten
- ⅔ cup panko breadcrumbs
- ½ cup freshly grated parmesan cheese
- ½ teaspoon Italian seasoning
- 3 tablespoons olive oil divided
Preheat the oven to 400°F (200°C) and position the rack in the upper third of the oven.
Slice each chicken breast in half lengthwise to create 4 thin cutlets. Pat dry with paper towels and season with garlic powder, salt, and pepper.
