Ingredients
  

  • 2 large chicken breasts
  • ½ teaspoon garlic powder
  • Salt and black pepper to taste
  • ¼ cup all-purpose flour
  • 2 large eggs beaten
  • cup panko breadcrumbs
  • ½ cup freshly grated parmesan cheese
  • ½ teaspoon Italian seasoning
  • 3 tablespoons olive oil divided

Instructions
 

  • Preheat the oven to 400°F (200°C) and position the rack in the upper third of the oven.
  • Slice each chicken breast in half lengthwise to create 4 thin cutlets. Pat dry with paper towels and season with garlic powder, salt, and pepper.
  • Prepare three shallow bowls:
    Bowl 1: FlourBowl 2: Beaten eggsBowl 3: Panko breadcrumbs, parmesan cheese, and Italian seasoning
  • Heat 2 tablespoons olive oil in a large oven-safe skillet over medium heat.
  • Coat each chicken cutlet in flour, then dip into the egg mixture, and finally coat thoroughly with the parmesan breadcrumb mixture.
  • Place 2 chicken cutlets in the hot skillet and cook for 2 to 3 minutes per side until golden brown.
  • Transfer cooked chicken to a plate and repeat with the remaining chicken, adding the final tablespoon of olive oil if needed.
  • Return all chicken pieces to the skillet and transfer to the oven.
  • Bake for 5 minutes or until the internal temperature reaches 165°F (74°C).
  • Serve immediately while hot and crispy.
