- 1 cup fresh mint leaves
- Ice cubes
- Optional Garnishes:

3.Add ice to glasses or pitcher
4.Top with sparkling water just before serving
5.Stir lightly and garnish as desired
-
Use fresh lime juice for the best flavor. Bottled juice tends to taste flat and slightly bitter in a spring mocktail.
-
Do not over muddle the mint. Gently press it to release aroma. Crushing it too much can make the drink taste slightly bitter.
-
Add sparkling water at the last minute. This keeps the drink fizzy and fresh instead of flat.
-
If using homemade syrup, let it cool completely before mixing. Warm syrup can dull the refreshing effect.
-
Adjust sweetness to your taste. Start with less lavender syrup, then add more if needed.
-
For a stronger floral note, let the lavender syrup steep a bit longer, but don’t overdo it or it may taste soapy.
-
Chill your glasses beforehand. It makes the spring mocktail feel even more refreshing.

This recipe scales easily, making it perfect for batching for parties or brunches.
